THE SOUL OF A COUNTRY

Cuisine is a very important aspect of a country’s culture. The richness and finesse of Moroccan cuisine no longer needs to be demonstrated since it is considered one of the best in the world. The words tagines, couscous, briouates (filled parcels), spices, awaken the taste buds and make them salivate. The countless spices that enhance the recipes open up a world of exceptional flavours quite different from that of Western cuisine.

The cooking workshop, given in the Museum of Moroccan Culinary Arts, invites you to discover this culinary universe, giving you the keys to understand its subtleties. You will put your new knowledge into practice, make your recipes, and, with a certificate in hand, will be able to impress your friends at home!

Under the guidance of the Dada chef, the workshops last about3 hours and can start at 9:00 am, 11:00 am or 3:00 pm. At the end of the lessons, a tasting of the prepared menus between students is naturally necessary.

Everyone will prepare a starter, a main course and a dessert.

Moroccan salads, such as Taktouka (made with green peppers, tomatoes, spices) or Zaalouk (made with eggplant, tomatoes, spices), main courses such as chicken tagine with candied lemons and olives, Berber tagine with vegetables, couscous with seven vegetables, grapes and candied onions, desserts such as Pastilla with milk or orange salad with cinnamon, will soon have no more secrets for you!

THE SCIENCE OF SPICES

As a presentation, an introduction to the science of spices will take place in the spice room. It is important to get to know their specificity, their taste strength, their health benefits, the perfect blends that ideally improve the recipes but also the undesirable uses that can spoil the flavours.

Saffron, cinnamon, ginger, sage, cumin, turmeric, paprika, thyme, oregano, nutmeg, cloves, nigella, anise, coriander, basil, curry, absinthe, star anise, bay leaf, parsley, mint… This is not an exhaustive list, of course, when you know that Ras el Hanout (a mixture of spices already prepared) can contain about forty of them.

NOW IT’S YOUR TURN

Up to you! The premises of the kitchen workshop are of an unfailing modernity. There are 34 individual stations. Each student has his or her own screen, to follow the chef’s instructions and gestures as well as possible, gas fire, tagines and all the accessories necessary for the proper preparation.

This activity is very popular with our guests. As a couple, with family or friends, it takes place in an instructive but recreational and fun way, and ends in conviviality around a table like a small gourmet and joyful party.
